Karate Do, Kevin and Don Seiler

KARATE-DO: Traditional Training for all Styles, 2Ed.

I have now purchased the second edition of this book, which expands on the initial pricipals even more. Both books do a great job of going beyond the physical aspects of Karate, providing a more well rounded approach. This includes exercize routines, diet, history and karate terms. Since the book is based on the authors actual experience first hand, it allows the reader to better understand all aspects of Karate-Do. I would strongly recommend both books for those who are starting down the path to a new beginning.

Great story, great inspiration for you fantasy adventure game

You should first note that the Airman Edition is simply Bruce Heard's wonderful fiction--it does not include the game material from the print edition (this is not a bad thing at all). Also, this story is in the style of his old Princess Ark stories from Dragon magazine back in the day. In fact, it very may well be a continuation of those stories (there is a literary device which leaves this open as a possibility), but no familiarity with those stories are required. If you like fantastic mashups of space faring galleons, high magic, and dragon riding astro-nautical knights, this is the story for you.

Wondrous new fantasy world

Bruce Heard, creator of the old Princess Ark series, brings back to life some of the old magic that first got me interested in D&D with this wondrous tome. It includes a fiction novelette to bring the world to life, and a system neutral setting book to let you bring your friends on new adventures in a world of skyships and dangerous wilderness. Definitely something to pick up, and hopefully the beginning of a fantasy setting that will capture the imaginations of generations to come.

ANOTHER GEM FROM CIA

This is the second book from the Culinary Institude of America that I have bought, the first being Chocolates and Confections by Grewelling. They are both luxury editions by Wiley.
The author Mr Francisco Migoya has studied in both France (which is always a good sign) and Mexico. He has produced an exceptional piece of work, a labor of love concerning all kinds of frozen desserts and their presentation.
The whole edition is characterised by class and quality, printed on gloss paper, with lots of photographs, most of them full page.
There are tables throughout with interesting and helpful information.
The measurements used are both Metric and Imperial weights. No cups and spoons here, they allow too much space for error.
I have to note that this is a book strictly for professionals, using equipment only available to them like Ice Cream machines, chillers, blast freezers, precision scales etc. The only way in which a home cook can benefit from the content is by being inspired from the decorations and try to impress their guests using home made or commercial Ice cream.
The book itself is divided into eight main chapters:
1) A brief history of frozen desserts.
2) Ingredients.
3) Equipment,Machines, and Tools.
4) Dairy based frozen desserts.
5) Non dairy frozen desserts.
6) Aerated still frozen desserts.
7) Finished items.
8) Base recipes.

In the introduction the author mentions that he has mainly worked on plated desserts throughout his career and the book reflects that, as most creations are plated and for the hotel or cafe industry, which is of course the main market for frozen desserts. There are several frozen entremets (whole gateaux) but they are the exeption, not the rule.

The first chapter gives a concise history of frozen desserts, and a history chapter is a feature of many serious books on the culinary sphere (eg The French Professional Pastry Series), descending directly from the French Culinary Tradition.

The chapter on ingredients describes all the ingredients used in frozen dessert production, giving thorough information especially for the main ingredients. The different kinds of sugars used are given ( eg trimoline, glucose) and their effects on the finished products are discussed. Also the many types of stabilisers and emulsifiers are discussed and combinations for Ice cream or sorbets are constructed.

The chapter on equipment and machines deals with all the machines necessary for ice cream production from scales to mixers to freezers and their sanitation. The Paco Machine is included, something I have not seen in any other book.

The Dairy-based Frozen Dessert section deals with the different aspects of Frozen Dairy production, like the type, (eg custard based Ice cream, Gelato etc)the method (both the Paco and the Machine-churning methods are discussed) and the overrun.

The Non Dairy Frozen Desserts chapter deals with Sorbets, Granitas etc displaying the different methods as well as base recipes.

The Aerated Still-Frozen desserts deal with Parfaits, Bombes, Semifreddo, Frozen Souffles and Mousses. These products are not churned, but are rather produced like normal mousses and then frozen.

The Finished Items chapter is by far the largest and it displays finished frozen preparations on the plate or otherwise. Recipes for bases are included eg Financier, Milk chocolate foam, basic Jelly, French Macaron, cold sweet soups and sauces, making this an almost all inclusive Pastry and Frozen dessert book. Creations range from normal to outright exotic and they include:
French macaron, cassis sorbet and almond ice cream sandwiches.
Burned milk gelato with mexican hot chocolate.
Popcorn sherbet with caramel popcorn and caramel sauce.
Matcha sorbet with toasted black sesame cigars.
Assorted citrus sorbet sandwiches.
Guava sorbet in chilled Hibiscus soup with crisp meringue sticks.
Some recipes combine savory and sweet ingredients, like Cucumber and Wasabi sorbet, Green zebra tomato sorbet, Rye bread Ice cream and Jalapeno sorbet.

The decorations are in the modern style, beautiful, somewhat minimal, usually simple but not simplistic and the excellent photos display every detail.

For the frozen dessert recipes you are referred to the base recipe section which includes methods and formulas for many creations including Banana ice cream, Mascarpone ice cream, Balsamic vinegar ice cream, Praline ice cream, Kumquat sorbet, Yuzu sorbet, Passion fruit sorbet, Buttermilk sherbet, Almond mint granite, Mimosa ice pops, Praline parfait,Espresso semifreddo, Peanut butter bombe, Frozen basil souffle.

After the main chapters follow appentices on several subjects like Average sugar, solids and acid content of fruit or Mathematical formulation of sorbets.
In the last pages there is a Glossary, Bibliography, Internet references, Resources section, a recipe index and a subject index.

The price for all this work is a giveaway. The normal price for this kind of professional books is at least triple.

A book for professionals, or ambitious amateurs

C. Terzis' review is comprehensive, so I'll just add a couple more thoughts. First, you CAN make family-sized quantities of these recipes if you are willing to do the math and scale down some of the recipes. Otherwise, you do need professional equipment to hold the gallons of milk, cream, etc. called for to produce commercial-sized batches.

Second, there are quite a number of cake/cookie/mousse recipes included in the book, and for the most part, they produce reasonable amounts for a home cook. Most of the ingredients called for are not hard to find in major cities, but may be harder to find in smaller towns. For example, you can find PVC pipes at a hardware store, and acetate sheets at many office supply stores. The author does provide a small list of internet suppliers at the back of the book which may be of use in finding some items.

Finally, the paper quality, photos, and dessert platings in this book are outstanding. The instructions are detailed, although they could have used a bit more editing. For example, sometimes articles and modifiers are left out, so you're not sure what the instructions refer to, unless you read on a bit, and then you can figure it out. For example, if the book says "push into the PVC pipe," and doesn't clarify WHAT you are supposed to push into the pipe (since there are several components to the dessert), it's a bit of a puzzle. This is a minor point, but it does get annoying after a while. The glossary could use a bit of work, too, as it defines some, but not all of the more esoteric commercial ingredients called for in some of the recipes.

A wonderful book that is a great source of inspiration, especially if you are looking for one that provides instructions, recipes, and photos of complex desserts made up of multiple components. I agree that it's a bargain for the price!

Between 1941 and 1944 Waffen-SS Oberscharführer (Sergeant) Werner Kindler took part in 84 days of close combat, qualifying him for the Close Combat Clasp in Gold, the Third Reich's highest decoration for a frontline soldier. He was also awarded the German Cross in Gold, the Iron Cross First and Second Class and the Wound Badge in Gold.  Drafted into the SS-Totenkopf in 1939, he served with a motorised unit in Poland, and in May 1941 was selected for the Leibstandarte-SS Adolf Hitler, with which he fought in the invasion of the Soviet Union. His unit converted to a Panzer Grenadier formation in 1942, and Kindler went on to fight at Kharkov and Kursk on the Eastern Front, and later in Belgium and France in 1944. At the end of the war, he was the last man of the Leibstandarte-SS to surrender to the Americans. This is one of the most dramatic first-hand accounts to come out of the Second World War.

About the Author
Werner Kindler was born in 1922 in what was then Poland. Shortly after the end of the war, he escaped from an Allied POW camp and was reunited with those of his family who escaped to West Germany. He first came to public attention when he was interviewed by the German author Patrick Agte for his biography of Kindler's commander, Joachim Pieper.

Very little first person recounting.

Close Combat Clasp in Gold and German Cross in Gold winner. Member of the LAH. A memoir...........well it goes downhill from there.Only anout 15% persent of this book is on the authors experiences and much of it is only in noting for example " during the attack on X I was credited my 21st close combat day". A good portion of the book is devoted to his early battallion commander Piper and various platoon and company commanders. Would have loved to have had a first person memoir from this author. Alot of the book is more justly a battallion war diary extract. As this is such a famous unit alot of this info is available from numerous other sources. I would buy this book again, just with much less enthusiasm.

It does not tell us much of his personal experiences

This book is not about Werner Kindler's experiences. It more of a history of the operations of the Leibstandarte Adolf Hitler (LAH). It reports Division and Corp information Kindler could not have know at the time. Half the book is reports from what other people saw and observed based on their own reports and memories. The other half is the unit history. In the fact that Kindler was there during this time it does give some small insight into what he must have observed. However, at best, it is simply his counted up days for the close combat clasp. For example, the text repeats over and over, "on this day we went here and did that and for this day I was awarded my Xth close combat day". Wow. If I had wanted an operational history of the LAH I would have bought a book to that effect. Guess I don't have to now since I have one. If that was why I had ordered the book, I would give it a 4 or 5. But it wasn't. If you are buying the book to learn of Kindler's experiences, don't because you won't. Now, having said all this, it wasn't a bad read and I did actually enjoy it.

The book basically is a travel guide recounting the locations where the author served. There is very little about what the author experienced. I can think of nothing to recommend this book.

Guitar Grimoire Porgressions & Improvisation

I ordered a new music book for my son. Waited the time for it to come. This was also a Christmas gift for him. When he received the book it wasn't in new condition. Some of the pages had tears on them. I paid the full price for this book. I was quite surprised by this, I didn't see the book because it was mailed directly to my son. Would I recommend this to others yes. My son loves this author and series of music books. Myself, no I was unhappy that the book was not of high quality.

This volume presents letters and diaries from 1443 to 1449, the period of his final voyages, which took him from Italy to the eastern shore of the Adriatic, the Greek mainland, the Aegean islands, Anatolia and Thrace, Mount Athos, Constantinople, the Cyclades, and Crete. Cyriac's accounts of his travels, with their commentary reflecting his wide-ranging antiquarian, political, religious, and commercial interests, provide a fascinating record of the encounter of the Renaissance world with the legacy of classical antiquity. The Latin texts assembled for this edition have been newly edited and most of them appear here for the first time in English. The edition is enhanced with reproductions of Cyriac's sketches and a map of his travels.
